Garden Market Organic Chicken & Vegetables

A simple skillet dinner built from everyday ingredients and seasonal vegetables. Tender chicken, broccoli, peppers, spinach, and zucchini come together with garlic, dried herbs, and a splash of Bragg Liquid Aminos for a meal that feels fresh, colorful, and easy to return to. Inspired by market vegetables and uncomplicated cooking, this is the kind of dinner that comes together naturally at the end of the day.

Ingredients

  • 2 organic chicken breasts

  • 1 tablespoon extra virgin olive oil

  • 2 cups broccoli florets

  • 1 medium zucchini, sliced into half moons

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 2 large handfuls fresh spinach

  • 2 garlic cloves, minced

  • 1 teaspoon dried oregano

  • ½ teaspoon dried thyme

  • 2 tablespoons Bragg Liquid Aminos

  • Sea salt, to taste

Optional for Serving

  • Organic brown basmati rice

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  2. Season the chicken breasts with sea salt, dried oregano, and dried thyme. Add the chicken to the skillet and cook until lightly browned on the outside but not fully cooked through, about 4–5 minutes per side.

  3. Transfer the chicken to a plate and set aside.

  4. Add the broccoli, zucchini, red bell pepper, yellow bell pepper, and garlic to the skillet. Reduce the heat to medium-low and cook for about 20 minutes, stirring occasionally.

  5. After about 10 minutes, stir the vegetables.

  6. Continue cooking for another 10 minutes, then stir again and check the vegetables with a fork. Cook to your preferred tenderness. Some may prefer broccoli with more bite, while others may prefer it softer.

  7. Add the spinach and stir until wilted.

  8. While the spinach softens, cut the chicken into bite-sized pieces.

  9. Return the chicken and any collected juices to the skillet. Stir everything together and cook for about 3 minutes.

  10. Turn off the heat, cover with a lid, and allow the chicken to finish cooking in the residual heat for about 2 minutes.

  11. Remove the lid, give everything a final stir, and serve warm on its own or alongside organic brown basmati rice.

  • The vegetables are the heart of this dish. Adjust the cooking time to your preferred texture, whether you enjoy broccoli with a bit of bite or cooked until more tender.

  • Cooking the chicken separately at first helps prevent overcooking while allowing the vegetables time to soften and develop flavor.

  • Leftover brown basmati rice makes an easy addition for a more substantial meal.

  • This skillet is flexible and works well with seasonal vegetables you already have on hand.
