Organic House Caesar with Crispy Chickpeas

A creamy organic Caesar layered with crisp romaine, golden roasted chickpeas, fresh parmesan, and a bright lemon-parmesan dressing. Grounded in simple ingredients and everyday nourishment, this version carries the richness of a traditional Caesar while remaining fresh, vibrant, and deeply satisfying.

Caesar Dressing

  • 100g plain Greek yogurt (about 6 tbsp or just under 1/2 cup)

  • 4 tbsp mayonnaise or Vegenaise
    (Follow Your Heart Grapeseed Oil Vegenaise works beautifully and is what I use).

  • 1 tsp Dijon mustard

  • 3/4 tsp Bragg liquid aminos

  • Juice of 1/2 lemon, plus extra squeeze to taste

  • 1–2 garlic cloves, finely minced

  • 3 tbsp freshly grated parmesan

  • 1 1/2 tsp olive oil

  • Small pinch sea salt, only if needed

Crispy Chickpeas

  • 1 can organic chickpeas, drained

  • 1–2 tsp extra virgin olive oil or avocado oil

  • Sea salt

Salad

  • 1 large organic romaine heart, chopped and chilled

  • Freshly grated Parmesan for finishing

Method:

Prepare the Ingredients

For the freshest texture and flavor, ensure all salad and dressing ingredients have been chilled before preparing.

Roast the Chickpeas

Preheat the oven to 400°F.

Rinse the chickpeas thoroughly in a colander.

Spread onto a parchment-lined baking sheet. Toss with extra virgin olive oil or avocado oil and sea salt. Roast for 25–30 minutes, checking around the 25-minute mark, until golden and crisp.

Allow the chickpeas to cool slightly before serving.

Prepare the Caesar Dressing

In a bowl, whisk together the Greek yogurt and mayonnaise or Vegenaise until smooth.

Add Dijon mustard, Bragg liquid aminos, lemon juice, and olive oil. Stir in minced garlic and freshly grated Parmesan.

Allow the dressing to sit for 5–10 minutes so the flavors deepen.

Taste and adjust if desired with:

  • an extra squeeze of lemon for brightness

  • a tiny splash of Bragg liquid aminos for added savory depth

  • a small pinch of sea salt, only if needed

Assemble

Add chilled romaine to a large serving bowl. Spoon over the Caesar dressing and scatter generously with warm crispy chickpeas.

Finish with freshly grated Parmesan before lightly tossing and serving immediately.
